Meal Plans

So today I thought I would write out my meal plan for the next week.
How we do meal plans in our household isn't like how most families do them. We plan out our suppers for the next week or so based on what we currently have in our house and what is on sale. Then, for breakfast and lunch we basically "wing it" or have Shakeology. So I will be going grocery shopping on Monday and will plan out suppers until then. Then I will plan out our meals for all of next week and next weekend.

Today (Thursday)- Chicken Parmagiana
Friday- Chicken Fajitas
Saturday- Cook Out (burgers/host dogs on the grill)
Sunday- Left Overs


Next Week:

Monday- BBQ Baked Chicken
Smother Chicken in BBQ sauce of your choice and bake it.

Tuesday- Marinated Italian Chicken (Baked)
Marinate chicken over night in Italian dressing of your choice and bake.

Wednesday- Broccoli Chicken Casserole 
Bottom Layer: Broccoli
Middle Layer: Cooked Chopped Chicken
Top Layers: Cream of Broccoli mixed with milk
                    Cheese
                    Bread crumbs mixed with butter

Thursday- Chicken Picatta
Dip chicken in egg, cover in flour, fry in little coconut oil both sides, remove from pan, add lemon juice to pan, mix and heat with oil, add over top of chicken.

Friday- Chicken Fajitas
Heat sliced cooked chicken on stove, remove, in same pan add coconut oil and sliced peppers. Add fajita seasoning and mix. Add chicken and mix. Let simmer until done.

Saturday- Chicken Enchiladas
Bake chicken breasts. While chicken is cooking, prepare enchilada mix: salsa, cilantro, parsley, lime juice mixed in food processor. When chicken is done cut into small cubes. Mix half of mix with chicken and mozzarella cheese. Put into tortillas. Spoon some left over mix on top. Add mozzarella.

Sunday- Left Overs


As you can tell we eat plenty of chicken. For a while we were just having chicken breasts every night and it was getting pretty boring. But I started venturing out and trying different things. Some nights I don't follow a recipe and just see how things turn out but most of the time I always have a recipe and usually follow it until I get the hang of it. Then that's when I start trying my own stuff and changing things up.

Externship Update

It has been a little over a month since I started my externship! I have learned so much in the last 5 weeks and I'm excited to learn so much more. I really hope I get hired at my externship site. They have been hinting at hiring me and a few things have been said but nothing official has been said yet. Warrior Challenge Obstacle Course and Mud Run

Today my husband and I completed the Warrior Challenge Obstacle Course and Mud Run! We got there at 07:30 bright and early. Before we went I ate a little bit of fruit and packed some things we might need (lots of towels, baby wipes, eye drops, snacks for afterwards, water, and electrolytes). I really enjoyed myself and it was empowering to accomplish it! Jake and I did it together all the way through. I'm so thankful that I have such an amazing husband that is so patient with me and helped me all the way through the event. The event was just short of 6 miles. It had over ten obstacles and included mud pits and a run through the woods that was very muddy! At the end we got some free water, Gatorade, fruit, snacks, and beer! I was very surprised but my Fitbit Surge held up pretty well! The only thing is when we got sprayed with water at the end, the force of the water must have hit one of the buttons and it turned off my Fitbit. That was as we were crossing the finis

Arizona 2.0

Since I've last posted there have been a few major changes and events that have happened. I have vacationed in the Bahamas, we have moved to Arizona, have bought a house, and have donated my hair. I've been meaning to update this blog for a while but now here I am watching Rome, drinking some cranberry juice, and typing on my laptop. Jake got a position in Southern Arizona as a contractor so we moved here and decided to buy a house. We looked at houses online for about a month before we found this one. It had everything we wanted in a house which was difficult to find. We did a virtual tour before deciding to put down an offer. It was accepted! Then we flew out to Arizona to walk through the home twice before going back to Tennessee and packing up all our stuff. After three days and both mine and Jake's cars breaking down in Texas we finally made it to Arizona. We lived out of a hotel for about a month.
